Abstract:
Water adsorption isotherms at 25°C of five soybean varieties grown in Argentina were determined; oil contents ranged from 16.7 to 22.7% (dry basis). Equilibrium moisture curves of the different varieties were coincident when the moisture contents were calculated on an oil‐free basis. Water adsorption by soybean oil was negligible compared with the water adsorbed by the non‐oil fraction at the same relative humidities. The adsorption isotherms of all varieties is well described by a single adsorption equation. Copyright © 1987, Wiley Blackwell. All rights reserved
