Abstract:
Water extraction of the defatted cotyledons from Lathyrus odoratus yields products rich in proteins and carbohydrates. Its analysis as well as amylolysis and TCA fractionation suggest the presence of small amounts of arabinans and arabinogalactans together with glycoproteins from the protein bodies. The cell walls are non-anisotropic, thin and fragile, composed by small amounts of non-ordered β-(1→4)-linked fibrillar polysaccharides (possibly cellulose), in agreement with its low mechanical strength.
