Abstract:
The equilibrium data of water sorption in several food products were tested by means of the equation ψTln aw = K1K2 m, where siψT is a parameter that takes into account the effect of temperature on sorption isotherm. For the products in vestigated it was found that the siψT parameter correlated reasonably well with the equilibrium data at different temperatures; K1 and K2 were characteristic parameters of the substance. It was also demonstrated that such an equation permitted an easy estimation of temperature shift. © 1989 Academic Press Limited.
