Abstract:

A re-evaluation of the water activity (aw) of saturated solution of KNO3 was performed in view of the discrepancy which exists on its exact aw value. Four different brands of KNO3 were used and ten determinations of aw were made for each one. The resulting mean value and its confidence interval (95% level) was 0.927 ± 0.001. This result, which agrees with a previous theoretical prediction of aw in saturated KNO3, indicates that the value 0.936 used by many authors should no longer be used. © 1988 Academic Press Limited.
