Abstract:
The relative effectiveness of ethyl oleate dipping for increasing the drying rate of sweet corn kernels was compared to dipping in petroleum ether, ethyl ether and steam blanching. All pretreatments greatly increased the drying rate of kernels as compared to untreated control samples. It is suggested that all these pretreatments act on the surface waxes, reducing the cuticular resistance to water loss which seems to be the main rate-controlling mechanism during drying. The beneficial effects of ethyl oleate are less for corn grain of lower moisture content (i.e. field corn). © 1987 Academic Press Limited.
