Abstract:

The water activity of various salts, macromolecules and mixed salt‐macromolecule solutions has been determined. The results indicate that interactions between salts and macromolecules can be ignored for predicting the water activity of mixed aqueous solutions. Copyright © 1981, Wiley Blackwell.
