La agricultura y la ganadería tienen un impacto ambiental enorme, que crece día a día. En un artículo anterior destacamos el rol de la biodiversidad en la producción agropecuaria, utilizando como ejemplo a los polinizadores. Aquí nos enfocamos en debatir las dimensiones de la seguridad alimentaria, y la importancia de cambios en nuestros hábitos de consumo en las ciudades para modifcar el uso de la tierra en zonas rurales y minimizar la huella ambiental. Mientras que el impacto ambiental del agro es justifcado comúnmente desde la necesidad de una mayor producción para lograr seguridad alimentaria, las dimensiones del acceso a los alimentos y de su correcta utilización juegan un papel clave hoy en día. Por ejemplo, en el mundo hay más personas con problemas nutricionales asociados al sobrepeso que a la desnutrición. Además, aumentar la producción en ciertos países desarrollados no implica mayor alimento en aquellos lugares pobres con defciencias alimentarias. Si la población mundial comiese menos carne proveniente de animales que son engordados con granos (por ej. feedlots) se reduciría el impacto ambiental, incluyendo menor emisión de gases con efecto invernadero. Es clave identifcar el origen de la carne que consumimos, ya que hay otros sistemas de producción de carne con menor impacto ambiental. Cambiar la dieta en algunos sectores de la población de modo de evitar los excesos en el consumo de carne, podría además evitar muchas muertes por menor obesidad, así como menor incidencia de enfermedades como las coronarias, accidentes cerebro vasculares y diabetes mellitus tipo 2 (esta última aumenta en todo el mundo a tasas epidémicas). El camino hacia la seguridad alimentaria y la sustentabilidad es polifacético, e incluye modifcar la forma en que distribuimos y utilizamos el alimento, destinar una mayor proporción de granos y legumbres al consumo humano en lugar de animal, reducir los desperdicios de comida, y modifcar nuestra dieta.
Agriculture and animal production have a great environmental impact, which is steadily growing. In a previous article, we highlighted how biodiversity is vital for agricultural production, emphasizing the role of animal pollinators. Here, we discuss the different dimensions of food security and the key role of our food choices in the cities to drive land use in rural areas and minimize the environmental footprint. Although the environmental impact of agriculture and animal production are commonly justified for the need of greater production to achieve food security, the dimensions of food access and utilization are nowadays of critical importance. For example, worldwide, there are more people with nutritional problems associated with overweight than hunger. In addition, increasing agricultural production in some developed countries does not imply greater food availability in the poor regions where is needed. If the world population eat less meat of animals feed on grains (e.g. feedlots) the environmental impact will be lower, including lower greenhouse gas emission. It is key to identify the origin of the meat that we consume, given that there are other animal production systems with lower environmental impacts. Dietary change to reduce the excess of meat consumption in some sectors of the population can prevent many deaths because of lower obesity, and reduce the incidence of diseases such as coronary heart disease, stroke, and type 2 diabetes (the latter one is increasing all over the world at epidemic rates). The achievement of food security and sustainability relies on many pathways and includes changing the way in which we distribute and utilize the food, using the grains and beans to feed people instead of animals, reducing food waste, and changing our diets.
