Resumen:

La ficina es una enzima proteolítica proveniente del látex de Ficus carica (higuera). Su actividad proteolítica se manifiesta al desnaturalizar sus proteínas sustrato mediante la ruptura de los enlaces disulfuro generados por aminoácidos sulforados (cisteína). Pertenece al grupo de las tiol proteasas y es muy similar a la papaína que se extrae del látex de papaya. Como la extracción de látex de la planta se hace difícil en invierno, se diseñó y construyó a escala de laboratorio, un liofilizador para conservar látex de higuera por largo tiempo y a temperatura ambiente. De esta manera se puede obtener ficina para su uso en el laboratorio a bajo costo y sin modificación de su actividad enzimática. Abstract:

Ficin is a proteolytic enzyme obtained from latex of Ficus carica. This protein belongs to the group of thiol protease enzymes and is very similar to papain from latex of papaya. As the extraction of latex from fig tree becomes difficult in winter, a lyophilizator was designed and built to operate at laboratory scale in order to conserve the latex for a long time at room temperature. With this procedure, ficine for laboratory use can be obtained at low cost. The objective of this work is to determine the enzymatic activity of ficin from lyophilized fig tree latex
